Domaine de Marotte Viognier

This is a bomb of a wine with a lot of smell and taste. You taste ripe apricots, exotic fruit, melon, yellow flowers and even a little honey. It has a lot of concentration and a super long finish. A wine that works well as an aperitif but also tastes very nice with poultry, white meat or asparagus with eggs. The yield of our Viognier was unfortunately low but partly because of that the concentration has increased.

As a fresh wine within 2 years; longer storage, up to 5 years, gives a beautiful full ripe wine without it becoming tired. When matured a very complex concentrated wine

Completely manual

Vinification:

Peducular maceration 6 hours, pneumatic pressing at low pressure, static cold débourbage, fermentation max. 16 °c for 3 weeks. Separation lie December/January. Clarification with bentonite. The “transfer” of the wine as much as possible by gravity.

Alcohol percentage:

14,5% vol.
